Organic New Season Lamb from the Well Hung Meat Company

organic, new season lamb available from this week.
The South West is one of the very first places in the country to have these much sought-after New Season Lambs, highly prized by chefs and food lovers. Graeme Roy, Managing Director of Well Hung Meat explains why, “due to the warm wet climate in Devon the lush green grass grows all year round; this creates the perfect environment for rearing livestock.”
“The lambs are a Poll-Dorset breed which have a breeding cycle that allows for lambs to be born in the autumn and fattened on their mothers’ milk before being put out to the clover rich grasses of Devon and Cornwall’s pastures. Here they are free to feed on organic grass in the cliff-top fields.”
Spring lamb is prized for being exceptionally tender and succulent and is a real seasonal treat. The Well Hung Meat Co source their Spring Lambs from the Flete Estate, a 5000 acre organic farm in the South Hams area of South Devon. “The Flete Estate has worked with us from the beginning, explains Graeme, the level of stockmanship provided by Lawrence and Andy (farm manager and shepherd at Flete) is outstanding and the animals they rear for us are fantastic. We work very closely with the Flete Estate and they rear the wonderful South Devon cattle for us as well as lamb throughout the year. It’s really reassuring to work with a farm like Flete where the standards are so high and we are always delighted with the new season lambs and the superb tenderness and taste that we are able to pass on to our customers.”
The Well Hung Meat Company hang all of their meat in the traditional manner in order to improve tenderness and flavour and create a succulence that is second to none. The Spring Lambs are hung for 7 days before being carefully butchered and delivered fresh to customers across the country. “After all the hard work that goes in to rearing the animals, it’s important that none of this is lost during the butchery, explains Graeme, the hanging is vital as it allows the meat to naturally develop a deeper flavour and become even more tender. We have two great butchers here at Well Hung Meat who make sure that all of the meat is traditionally butchered to the highest standards. We take utmost care and attention at every stage in order to provide our customers with the very best organic meat.”
The Well Hung Meat Company has been recognised for the outstanding quality of their Lamb by winning a Soil Association Organic Food Award. The award is one of five won by the company for their organic meat.
