The Ultimate Beef Burger

Ingredients

800g steak mince

2 shallots, finely diced

1 egg,beaten

4 tbsp chopped gherkins

2 tbsp double cream

1/2 tbsp english mustard

Olive oil

Black pepper and sea salt

Method

Sauté the chopped shallots quickly in a little oil and allow to cool. Place the shallots, chopped gherkins, cream, mustard and egg into a mixing bowl. Beat together then season the mixture well.

Add the steak mince to the mixing bowl and using your hands ensure a thorough fusion of all the flavours. Using a little oil on your hands, shape the mixture into 6-8 even sized burgers, then leave to rest for 10 minutes. The burgers should be almost an inch (3cm) thick.

Cook the burgers medium rare; for about 4-5 minutes on each side, or to your liking. If using a BBQ, wait until the coals have turned white and the flames have died down.

Season well and serve in a fresh bun with spiced tomato relish.
