Ultimate Bacon Brunch with Pancakes and Maple Syrup

Serves 4

Ingredients

8-12 Rashers of Back Bacon
100g Plain Flour
1 Egg
125ml Milk
1 tsp Olive Oil
Maple Syrup

Method

First, make the batter for the pancakes; place the flour in a bowl and make a well in the centre, add the egg. Beat the egg slowly, folding in the flour. Add the milk gradually, until the mixture is a smooth thick batter.

Grill the bacon for about 2-4 minutes under a hot grill, keep warm. Heat the oil in a non-stick pan and add 4 large spoonfuls of batter, allow to set and brown on one side before carefully turning. Repeat using all the batter.

Serve the pancakes stacked with the crispy bacon rashers and liberally pour over maple syrup.
