Baked Mushrooms with Bacon, Sausage and Tomatoes
Serves 6
Ingredients
8 Rashers of Streaky
Bacon , chopped
4 Pork and Apple
Sausages
6 Large Field Mushrooms
75g Butter
1 heaped tbsp Thyme, chopped
1 Beef Tomato, diced
6 tbsp Cheddar Cheese, coarsely grated
Method
Preheat the oven to 190C/350F/Gas Mark 5. Remove the stalks from the mushrooms and chop finely. Clean the caps and place gill-side up in a lightly greased roasting tin. Mix the butter, thyme and some seasoning and spread over the mushrooms. Scatter with the stalks.
Pull apart the sausagemeat and pile onto the mushrooms with the chopped bacon and tomatoes. Season lightly and chill for one hour.
Bake for 15 minutes or until the bacon and sausages are lightly golden and the mushrooms have softened. Remove from the oven and sprinkle with the cheese, then return to the oven for a further 5 minutes.
Makes a delicious alternative to a fried breakfast.
