Caramelised Belly Pork
Serves 4
Ingredients
700g Pork Belly
Slices, cut into cubes
2 Onions, peeled and roughly sliced
6 tbsp Dark Soy Sauce
4 tbsp Sugar
4 tbsp Fish Sauce
Oil
Water
Chinese Lettuce
Rice
Method
Saute the onions in a frying pan until just soft, then transfer to a heavy saucepan. Brown the pork pieces quickly over a high heat then add to the saucepan, draining the oil.
Add the soy sauce, sugar, and fish sauce and pour in enough water to cover the meat. Bring to the boil and then simmer, covered for at least an hour.
Remove the lid and continue to simmer until the pork is tender and glazed. Add more water if needed - there should be just enough sauce to coat the meat. Boil the sauce down to a thick, rich glaze.
Serve on a bed of chinese lettuce with a scoop of steamed rice.
