Glazed Sirloin of Beef


Ingredients


1.25kg/ 2lb Sirloin Joint, boned and rolled
Salt and Ground Black Pepper
3 Red Onions, peeled and cut into wedges
12 Garlic Cloves, unpeeled
6 Tbsps Beer
3 Tbsps Redcurrant Jelly

Method


Preheat the oven to 190c/375F/Gas Mark 5. Place the joint on a metal rack in a large roasting tin. Season and roast uncovered for 1 hour 15 minutes for medium, or longer/shorter as desired. Occasionally baste joint during cooking with its own juices.

30-40 minutes before the end of the cooking time, add the red onions and garlic under the beef. 10 minutes before the end of the cooking time, mix the beer with the redcurrant jelly and glaze the beef.

Remove the joint from the oven, wrap loosely in foil and allow to rest. Serve the beef with the red onions, garlic, gravy and yorkshire puddings.
