Mediterranean Mutton
Serves 4
Ingredients
4 Mutton Cutlets
15ml Olive Oil
1 Medium Onion, finely chopped
1 of each Red and Green Peppers
1 Clove of Garlic, chopped
Half a glass of Red Wine
500ml Lamb Stock
1 Tbsp Capers
1 Tsp Dried Herbes de Provence
Ground Black Pepper
Cornflour
Method
Heat oven to 180c/ Gas Mark 4. Char the peppers over a flame and remove the skins. Heat the oil in a flameproof casserole dish and soften the onion for approximately 5 minutes.
Add the garlic and the peppers cut into fairly large pieces. Add the cutlets, the capers, herbs and black pepper and pour in the red wine and stock. Bring to the boil and then transfer to the oven, cook for approximately an hour and a half. Transfer to the hob and thicken using the cornflour, add seasoning if required.
Serve with jacket potatoes and green vegetables.
