Sticky Lime and Ginger Chicken
Serves 2
Ingredients
3 Globes of Stem Ginger, finely diced
2 tbsp Honey
2 tbsp Soy Sauce
Zest of 2 Limes
Juice of 1 Lime
2 Garlic Cloves, crushed
6 Chicken Thighs
Method
Preheat the oven to 230C/Gas Mark 8. Mix the ginger with the honey, soy sauce, zest and juice and the garlic in a bowl.
Add the chicken thighs and mix together well to coat the chicken. Spread out in a foil-lined ceramic baking dish and bake for 20 minutes, turning over halfway through.
Serve the chicken with steamed basmati rice and broccoli.
