Roast Pork Tenderloin with a Parsley and Garlic Crust

Serves 4

Ingredients

1 Pork Tenderloin (approx 600g)
1 Egg
1 Slice of Bread, crumbed
15g Fresh Parsley, very finely chopped
1 Clove of Garlic, crushed
Salt and Black Pepper

Method

Preheat the oven to 190C/370F/Gas Mark 5. Beat the egg and pour into an oblong dish. Combine the breadcrumbs, parsley, garlic, salt and pepper, and spread them out into another oblong dish.

Roll the tenderloin in the egg and then in the crumb mixture until evenly coated. Transfer the coated fillets into a greased baking dish and cook for 40-45 minutes, then leave to rest for 10 minutes before slicing.

Serve with potatoes and mushrooms sauce.
