Roast Turkey with Basil and Lemon
Ingredients

5kg Turkey
3 Lemons
Fresh Basil
Salt and Pepper
Lemons, cut into wedges to serve
Method
Preheat oven to 190C/375F/Gas Mark 5. Calculate the cooking time, allowing 18 minutes per 450g.
Wipe the turkey with a clean damp cloth and sprinkle the cavity with salt and pepper. Halve the lemons and place inside the body cavity with a few whole basil sprigs.
Place the turkey breast side down in a roasting tin and roast for the calculated cooking time. Twenty minutes before the end of cooking, turn the turkey over and continue to cook for the rest of the cooking time.
Check the turkey is cooked by inserting a long skewer in the thickest part of the thigh to check if the juices run clear.
Remove from the oven, place on a serving plate and cover with a large sheet of foil. Allow to rest for 20 minutes.
Garnish with the lemon wedges and extra basil and serve.
