An exciting change from the usual bacon and eggs, this recipe uses our Firecracker Back Bacon. With a hint of chilli it makes the perfect (and most delicious) wakeup call in the morning.
2 organic eggs,
1 small baguette cut into slices,
A little butter,
A little oil for greasing,
Salt and pepper to season (if required).
Preheat the oven to 180c. Beat the two eggs in a bowl and set aside.
Cut the firecracker bacon into small pieces and add to the beaten eggs. Season if necessary. Mix until evenly combined.
Lightly grease a small oven-proof pan. Add the egg and bacon mixture. Then place in the oven and leave to cook for 15 minutes or until cooked through.
Place a small amount of butter in a frying pan and heat. Add your baguette slices to the now heated butter and fry on either side for about 30 seconds or until golden. Serve alongside the baked eggs and bacon.
