400g beef mince
2 onions, chopped
2-3 garlic cloves, finely chopped
2 carrots, grated
400g chopped tomatoes
350g dried pasta shapes
100g cheddar, grated
Heat a little oil in a large frying pan and add the onion, garlic, and carrots. Fry gently until softened, then add the beef mince and cook for 5 minutes, until browned. Stir in the chopped tomatoes and simmer over a low heat for 5-10 minutes. Preheat the oven to 190C/350F/gas 5.
Meanwhile cook the pasta according to the pack instructions, or until al dente. Drain well and add to the beef and vegetables, mixing well.
Transfer to an ovenproof dish and top with the grated cheese. Bake for 20 minutes, until the top is golden and bubbling. You can always add some breadcrumbs to the cheese for a more crunchy topping.
