1 tsp dried oregano
half teaspoon sweet smoked paprika
good pinch of salt
1 tbsp butter, avocado oil, mild unflavoured coconut oil, for frying
2 organic pork loin steaks
To make the dry rub for the pork steaks, mix together the oregano, paprika and salt in a bowl. Rub this mixture all over the steaks and leave to one side for a few minutes, or until you’re ready to cook. To cook the pork loin steaks, heat the cooking oil or butter in a frying pan and fry the steaks for 3-4 minutes per side, trying not to move them around too much, so that they caramelise in the heat of the pan. Once cooked thoroughly, lift out the steaks and leave them to rest for a few minutes to cool slightly and ensure they remain juicy and succulent. Beautiful served with a leafy green salad dressed with olive oil, salt and sherry vinegar.
