Pork and Garlic Bread Bake


450g diced pork

1 tbsp oil

1 large onion, chopped

1 celery sticks, chopped

1 eating apple, cored and chopped

2 tsp dried mixed herbs

25g plain flour

500ml chicken stock

For the topping:

200g french bread, sliced

1 garlic clove, crushed

25g cheddar cheese, grated

2 tbsp butter


Preheat the oven to 180°C, fan oven 160°C, Gas Mark 4.  Sprinkle the dried mixed herbs and flour on to a plate and season with pepper. Roll the pieces of pork in this mixture.

Heat the oil in a flameproof casserole dish and cook the pork, onion, celery and apple for about 4-5 minutes. Add the stock and bring to the boil, stirring. Cover and transfer to the oven. Bake for 1 hour 15 minutes.

Mix together the butter and garlic. Spread onto the slices of bread and arrange them on top of the casserole, spread side up. Sprinkle with the cheese and bake for another 10-15 minutes, without a lid, until browned.
