4-6 cooked sausages, sliced
1 onion, chopped
1 red pepper, diced
1 tbsp olive oil
225g basmati rice
1 tub ready-made salsa sauce
Heat the oil in a frying pan and sauté the onion and pepper until tender.
Stir in the rice and stock, cover and simmer for 20 minutes until the rice is tender. Stir in the sausages and salsa sauce and simmer uncovered over a medium heat for a further 5 minutes.
Garnish with some chopped parsley and serve.
